This dish brings together two things. A smooth pesto risotto with a bright, herbal taste and scallops that become beautifully golden when seared the right way. The combination is light, clean and satisfying without being heavy.


The base starts with Arborio rice slowly cooked in warm broth until it turns silky. A spoon of pesto and a little parmesan bring the final touch of creaminess. The scallops need nothing more than a little salt, a drizzle of olive oil and a hot pan. When they hit the heat, they form that caramelized crust while staying tender inside. A few almond flakes add a gentle crunch and fresh parsley lifts the flavour.


It’s a balanced, nutritious meal that fits perfectly for a healthy lifestyle, offering protein, healthy fats and a fresh Mediterranean profile. Ideal for a calm evening meal or when you want something wholesome but still elegant.
